Recipe: Dump Cake

Ingredients:

  • 1 box yellow cake mix
  • 1 can cherry pie filling
  • 1 can crushed pineapple (in its own juice; not syrup)
  • 1 stick of butter or margarine
  • 1 cup pecan pieces (optional)
Instructions:
  1. Butter the inside of your dutch oven (including lid).
  2. Drain the juice from crushed pineapple into a bowl - do *not* throw away.
  3. "Dump" the drained pineapple into the Dutch oven; cover bottom of oven completely.
  4. "Dump" the cherry pie filling in and spread to cover pineapple.
  5. "Dump" the dry cake mix (straight from the box, not mixed) onto the cherry pie filling and spread to cover.
  6. Sprinkle pecan pieces over cake mix.
  7. Cut butter or margarine into pieces and place on the cake mix.
  8. Pour reserved pineapple juice evenly over cake mix.
  9. Put the lid on the dutch oven, and place in hot coals. Place a few coals on top of the lid for even heating. Temperature of the coals will determine how quickly the cake bakes. Check after about 15 minutes.
Notes:
  • Experiment, experiment, experiment. We've made this several times with different types of pie filling and fruit. Just make sure you have the juice to pour on top to make the cake moist.
  • It's OK to leave the pecans off.
  • Make sure to make a LOT. This never, ever has leftovers. If it does, it's gone by breakfast.
